Moroccan Mint

Mint tea is more than just a beverage in countries such as Morocco, Algeria and Tunisia, it's a social event!

When prepared for guest, the tea takes on a ceremonial form with the use of Chinese green tea, fresh mint leaves, boiling water and lots of sugar! Below is a simple outline of how this beverage is Traditionally prepared.

1. In a teapot, combine two teaspoons of tea-leaf with half a litre of boiling water. Allow it to steep for at least 15 minutes.

2. Without stirring, filter the mixture into a different stainless steel pot, so that the tea leaves and course powder are removed.

3. Add Sugar (about 1 teaspoon per 100 millilitres).

4. Bring to a boil over Medium heat (this helps the sugar dissolve).

5. Add Fresh mint leaves to the teapot or directly in the cup!

Pouring of this tea is often done at a high height to create a foamy top. It is also custom to serve the same tea pot three times, giving the consumer three very different cups of tea!

This server is creating a foamy top by pouring the tea from up high!
